Balsamic Baked Asparagus

I’ve not had asparagus in long time and craved it today. I wanted to make something that would pair well in a salad with quinoa so baked seemed like a good way to prepare them and the sweetness of balsamic vinegar goes with most vegetables so that how I flavored them.

1 ½ pound fresh asparagus tops, ends removed
2 tsp. olive oil
½ tsp. salt
3 tbsp. balsamic vinegar
1 tbsp. Dijon mustard
½ tbsp. agave nectar
2 tsp. dried Italian herbs mix
Preheat oven to F400
Place the asparagus in a baking dish. Combine olive oil, balsamic vinegar, mustard and agave nectar in a bowl and then drizzle this over asparagus. Sprinkle salt and Italian herbs over. Bake for 15-20 minutes, until lightly browned.

Her vision was to establish a site providing insight about gardening, home and personal care, baby & child, and of course food & nutrition. Green-Mom.com hosts many talented writers shedding light on ways to incorporate eco-friendly and nutritious practices for busy families. She is an advocate for organic, local and sustainable businesses. Fredrica hopes to inspire social change through her lifestyle, passion and business. Fredrica lives with her husband James Harker-Syren and their three children in San Diego, CA.
