Baked Quorn in a Mushroom Sauce

This is a dish I made last night for dinner. It was one of those dishes I had no idea what I was making, but it all turned out so well the kids and adults loved it. Any meal that is creamy and contains protein and veggies is a hit for me.

2 cups quorn chik’n tenders

1 large carrots, peeled and cut into small diced

¾ cup fresh or frozen corn

1 tbsp. olive oil

½ cup leeks, sliced thin

1 cup mushrooms, sliced

2 tbsp. Bragg’s liquid amines or tamari

1 tbsp. all-purpose flour

1 ½ cup milk

½ cup sour cream

Poultry spice to taste

Black pepper to taste

1 tbsp. Mango chutney


Place quorn, carrots and corn in an oven dish. Preheat oven to F400.

Heat oil in a saucepan on medium heat and sauté leeks and mushrooms for 3-5 minutes. Add Bragg’s liquid amines or tamari and sprinkle flour. Stir quickly and make into a paste. Add milk and stir until all lumps are gone. Bring to a boil for 2 minutes, stirring often. Add sour cream, poultry spice, black pepper and mango chutney. Simmer on low heat for a few minutes. Pour sauce over quorn and veggies. Bake for 20 minutes. Swerve with rice or whole-wheat pasta.
