It’s apple season and if you are blesses with lots apples you should make apple bread. Yesterday I traded some figs for apples from one of neighbor so I made apple bread for kids to have with soup dinner and sure was a hit.
- 1 cup grated apples
- 50g butter
- 2. 1/2 cups almond milk
- 1 package active dry yeast
- 1 tbsp. maple syrup
- 1 tsp salt
- 2 tsp ground cinnamon
- 2 tbsp. whole flax seeds
- About 6 cups white spelt flour
Mix half of the flour, cinnamon, salt, flax seeds and yeast in a large mixing bowl. Melt butter on the stove in a pot and add milk, maple syrup and apples. Add wet to dry ingredients and blend well. Add a little flour at the time until you have a sticky but workable dough. Let us rise under a kitchen towel for 45 minutes.
Place dough on a surface dusted with flour. Knead the dough, adding more flour if it’s too sticky. Make dinner rolls by rolling them in your hand. Place rolls on a parchment paper on a cookie sheet. Cover with towel and rest for 20. Preheat oven to F400/C250
Bake for 8-10 minutes, depending on size. They should be golden.
