And yes another seitan stew

I know, there has been waaaay too many seitan recipes lately but since I figured out a way to make cheap and easy seitan that and beans has been the staple of our diet. So here comes another yet delicious seitan dish.  I think stews, soups and casserole are I busy mom’s best friend since they require little attention after food prep and usually works well as leftovers the next day.

1 tbs canola oil
1/2 cup yellow onion, minced
2 large carrots, cut into coins
1 cup seitan, cubed
2 bay leafs
5 black pepper corns
1/2-1 tbs tamari
2 cups water
1 tbs corn starch
1 cups cooked or canned kidney beans
Salt & pepper to taste

Heat oil in in a large sauce pan on medium heat and cook onions 1 minutes. Cook carrots and seitan with the onions for 3-4 minutes. Add bay leaf, pepper corns, tamari and water and bring to a boil. Cook for 5-7 minutes or until carrots are soft. Mix corn starch with a little of the broth from the stew and stir until lump free. Blend in with the stew and add kidney beans, salt and pepper. Reduce to a simmer and stir until stew broth has thicken a bit. Serve over mashed potatoes and side of steamed broccoli.
