Almond and pear muffins

My day started out so well with kids who slept in and a yoga class. It’s a beautiful day so a fun snack in the garden with Bella when she gets home is in order. For the snack I made super yummy almond paste and pear muffins.

2 1/4 cups white spelt flour
½ cups sugar
1 tbsp. baking powder
½ vanilla bean, seeds used
½ cup canola oil
½ cup sour cream
½ cup grated almond paste
½ cup pears, peeled and diced
1 cup almond milk
Preheat oven to F200
Mix spelt flour, sugar, baking powder and vanilla bean seeds in a large bowl.  Blend canola oil, sour cream, almond paste and milk until smooth. Combine both and blend well. Pour patter into baking cups 2/3 full. Add a few pears to each baking cup.  Bake 12-18 minutes, until an inserted toothpick comes out dry. Let them cool completely before serving.

Years of food blogging developed into the cookbook Yummy in My Tummy, Healthy Cooking for the Whole Family. Upon the arrival of her second child, Fredrica founded Green-Mom.com. Her vision was to establish a site providing insight about gardening, home and personal care, baby & child, and of course food & nutrition. Green-Mom.com hosts many talented writers shedding light on ways to incorporate eco-friendly and nutritious practices for busy families. She is an advocate for organic, local and sustainable businesses. Fredrica hopes to inspire social change through her lifestyle, passion and business. Fredrica lives with her husband James Harker-Syren and their three children in San Diego, CA.
