Peanut and Chocolate Chip Cookies

Oh, how I love summer break. Long days outside, lots of fun, sleeping in. And picnics. Of course no picnic is complete without cookies, and one of our favorite cookie recipes is this one. It has the perfect balance of salt from the peanuts and sweetness from the chocolate chips.

  • 200g butterpeanut and chcolate cookies
  • 1 cup sugar
  • ½ cup chopped salted and roasted peanuts
  • ½ cup dark chocolate chips
  • 1 cup oats
  • 1 tsp baking powder
  • Seeds from 1/2  vanilla bean 
  • 3 cups white spelt flour or all-purpose flour
  • 1/2 cup dark chocolate chips
  • Preheat oven to F350.

Combine butter and sugar in a bowl, and whip until fluffy and white. Stir in remaining ingredients except the peanuts and chocolate chips, and blend well. Fold in the peanuts and chocolate. Roll dough into little balls and place in a parchment paper on a cookie sheet. Press each flat with the back of a fork. Bake for 25-30 minutes. Let cookies cool on a wire rack.
